Craving comfort food that's both flavourful and nourishing? These lentil "meatballs" bring all the savoury goodness of classic meatballs without the meat! Packed with protein, spices, and fresh herbs, they're a delicious choice for any meal.
Makes 4-5 Servings
Ingredients
• 1 cup Arosis Organic Small Lentils
• 2/3 cup oats
• 1 carrot
• 1 medium onion
• 1 clove garlic
• 2 tbsp parsley
• 2 teaspoons cumin
• 5 tablespoons olive oil
• salt
• pepper
• 1 bay leaf
Tip: you can make delicious "meatballs" by replacing the cumin with 2 tablespoons of mint.
Instructions
1. Preheat oven to 350ºF (180ºC).
2. Boil the lentils in plenty of water with the bay leaf, drain, and blend in the food processor.
3. Pour the lentils into a bowl. Add the salt, pepper, olive oil, finely chopped carrot, finely chopped onion, crushed garlic, oats, cumin, and finely chopped parsley.
4. Mix well and shape into meatballs.
5. Roll out meatballs onto a sheet pan lined with parchment paper. Bake for 20 minutes. Serve either plain or with a sauce of your choice.
