Looking for a dish that's simple, comforting, and full of Mediterranean flavour? Translating to "married fava," this traditional Greek dish combines creamy fava purée with onions, olive oil, and lemon for a nourishing and flavourful meal.

Ingredients
• 2 cups Arosis Organic Fava Beans
• 3 large dried onions
• extra virgin olive oil
• 1 lemon
• salt
• freshly ground pepper
Instructions
1. Rinse the fava beans well in a colander and add to a large pot with enough water to cover them.
2. When the fava beans begin to boil, remove the foam with a slotted spoon. Then add an onion cut into quarters, salt, and pepper.
3. Boil the fava beans for about 1 hour over low heat without stirring until they become porridge-like.
4. Remove from heat and allow the fava beans to cool.
5. Purée in a blender until the mixture gets thick and creamy. Peel and finely chop the remaining onions.
6. Serve the fava beans on a platter, garnish with the chopped onions, drizzle with olive oil and lemon juice, and sprinkle with freshly ground pepper.
You can serve the fava beans with onions sautéed in oil. It can be served hot or cold as an appetizer and as a main course.
