Whipped Feta Ingredients
- 225 g Kalavryta Feta, drained and crumbled
- ½ cup plain Greek yogurt
- Zest of 1 lemon
- 2 tbsp extra virgin olive oil
- 1 small garlic clove, optional
- Salt, to taste
- Freshly ground black pepper, to taste
Topping Ingredients
- 1 tbsp extra virgin olive oil
- 1 tbsp chopped fresh parsley
- 1 tbsp chopped fresh mint
- 1 tbsp toasted pine nuts or chopped pistachios
- ½ tsp red pepper flakes
- Optional: a small drizzle of honey
Instructions
- Make the whipped feta. Add the feta, Greek yogurt, lemon zest, olive oil, and garlic (if using) to a food processor. Blend until smooth and creamy, scraping down the sides as needed. If the mixture is too thick, add a small spoonful of yogurt and blend again.
- Build the dip. Spoon the whipped feta onto a serving plate and use the back of a spoon to spread it out, creating a shallow well in the centre.
- Add the toppings. Drizzle with olive oil, then scatter over the parsley, mint, nuts and red pepper flakes. For a sweet-and-savoury finish, add a light drizzle of honey.
- Serve. Enjoy immediately with warm pita, pita chips, crackers or fresh vegetables.
